why does my armor level down?

i only recently started olaying the game and i have noticed that sometimes after dying my armor and weaponds turn gray and sometimes they turn normal again but sometimes i am stuck whit them like 0 stars and when i take them off they dissapear. can someone explaing me what is happening?
